Boozy Trifle (Boozy Holiday Special)

For our 'Boozy Holiday Special' episode of Kabhi Sushi Kabhi Shalgam, Urooj and Ankiet teach us how to cook with alcohol and make a delicious trifle pudding. To make the Boozy Trifle you will need the following:

Pound cake Port wine Custard Powder Milk - 1 litre Brandy - 60 ml Sugar - 250 gm Strawberry Jam Biscuits Whipping cream Chikki - 2 packets Pomegranate

Cut pound cake into 3 horizontal layers. Slather each layer with strawberry jam. Chop up the pound cake into bite sized pieces. Transfer the cake pieces into a large transparent mixing bowl and cover with port wine. Set aside. Start on the custard. Set a saucepan on the hob, add milk and sugar to the saucepan. Add a little milk into the bowl in which custard powder is stored. Dissolve custard powder into milk. Add this mixture into the saucepan once the milk is simmering. Use a whisk to whisk away any lumps. Cook over medium flame till thick. Take the saucepan off the gas stove and pass it through a wire mesh to get any lumps out. Add in the brandy into cooked custard and whisk. Set aside. Crush the biscuits into the platter. Start layering the trifle. Take one plating cup, add the soaked cake layer to the bottom. Add a layer of crushed biscuits. Add a custard layer. Add a few more slices of cake on top. In another large transparent mixing bowl, add the whipping cream, a splash of port wine and whip until stiff peaks form. Spoon the whipped cream on the tops of the trifle. Garnish with chopped peanut chikki and pomegranate seeds.
